Crock Pot Beef and Lentil Stew -  Gluten Free Recipe

Ingredients

2 x 400 gm can organic crushed tomatoes

1 x 400 gm can off drained and washed lentils

2 cups Organic Beef Stock

1 cup sliced mushrooms

1 red capsicum diced

1 heaped tbsp paprika

2 x medium carrots sliced

2 large potatoes diced

1 Tbsp Organic Coconut Oil

1/2 red onion diced

1 glove garlic crushed

 1 Tbsp Tapioca flour

 300 gm gravy beef diced

1 tsp oregano

½ tsp ground black pepper

1/4 tsp Himalayan salt

1 tsp finely chopped rosemary

1/4 tsp ground black pepper

 

Method

Set up the crock pot, put in the canned tomatoes, beef stock, mushrooms, carrots, potatoes, capsicum, drained lentils, herbs and stir until combined.

In a plastic bag or bowl coat the beef with the Tapioca flour, paprika, salt and ground pepper and mix or shake until covered.

In a medium fry pan heat the coconut oil. Once hot place the coated beef (leaving the excess flour aside) , paprika, garlic and onion into the fry pan and cook until brown.

Once the meat starts to turn dark brown but not cooked through, place the beef into the Crock Pot, stir through and set on high for 4 -6 hours or low from 6-8 hours.

To add some extra flavour, once you have removed the beef from the fry pan over a medium heat, mix 1/2 cup water along with the remaining flour and stir with a wooden spoon to remove all the flour and juices from the pan. Stir until boiling and all the mix stuck on the pan is now in the water making a delicious sauce that can now also be added to the crock pot.

Stir through until all ingredients in the crock pot are combined. Leave to cook, no need to stir and these types of recipes are great to put on in the morning, so they are ready for when you get home.

Depending on how big your crock pot is, you may need to add a little more water or stock. Just don’t add too much as moisture is created in the crock pot. Just make sure the water content is just below the ingredients and the pot works it's magic.

Serve with some fresh herbs sprinkled on top with some crusty bread

Optional - Serve with some Coyo Yogurt.

Serves 6-8 people or one person for a week
