As I have stated in previous blogs, I am not a nutritionist or an expert but I do love to cook. Actually, let me rephrase that. I love eating my food and I also love watching others enjoying the food I prepared. If someone could cook my meals for me, I would not complain!
Sometimes we want to eat a dish that is clean, delicious and to put frankly, simple. We get tired, busy, lack motivation or even time. So I decided to share one of my favourite go to recipes that has always been a winner.
Lemon, Herb Chicken with Veg on a bed of Couscous
Ingredients (serves 4)
150g (3/4 cup) wholemeal couscous
250ml (1 cup) boiling water
2 tablespoon coconut oil
2 tablespoon extra virgin olive oil
1 lemon
2 cloves garlic
Cajun spices, turmeric, mixed herbs, smoked paprika
340 grams sliced chicken breast fillet
1 small red (spanish) onion diced
100 grams green beans
1 small capsicum (red pepper)
2 tablespoons (or more depending on taste) wholegrain seeded mustard
Method
Heat 1 tablespoon of coconut oil in a pan, add chicken and fry for 3 minutes on high heat.
Add garlic, pinch of mixed herbs, pinch of Cajun spices, pinch of turmeric and a pinch of smoked paprika. Squeeze half the lemon onto the chicken, fry until cooked.
In another pan, heat 1 tablespoon of coconut oil, throw in red onion, beans and capsicum. Stir fry for 1 minute on high heat adding in the mustard.
Place the couscous in a heatproof bowl. Pour over the boiling water and add the 2 tablespoon of olive oil. Cover. Let stand for 5 minutes or until water is absorbed. Fluff with a fork.
Serve couscous onto plate with vegetables scattered on top. Add chicken last. Use the remainder of the lemon and squeeze over the top of the meal.
